Morning can be the most hectic time of the day, which forces many of us to start our day without the proper fuel.
Coffee can give you a burst of energy, but that’s about all. So I’ve come up with a list of some make ahead and/or quick to prepare breakfast options to help you get your day off to a good start.

Scrambled Eggs and Greens
Ingredients:
4oz chopped turkey or ham
1/3c chopped onion
1 handful spinach
1/2c mushrooms, sliced
3 eggs
1 slice cheese
1c berries to serve as a side
Instructions:
Stir Fry the turkey, onions and mushrooms for 3 minutes, until the spinach becomes dark green. Add the eggs and cheese and continue stirring for 2 minutes, just until the eggs are cooked. Eat with berries on the side. Yum!
Banana Wrap
Ingredients:
1 large whole wheat tortilla
1tbsp peanut butter
1 banana
Instructions:
Spread peanut butter over wrap. Place banana at one end. Roll it up and enjoy!
Blueberry Banana Oatmeal

Overnight Oats
Ingredients:
1/4 cup uncooked old fashioned rolled oats
1/3 cup almond or whole milk
1/4 cup Greek yogurt
1-1/2 teaspoons dried chia seeds
1/8 teaspoon almond extract (optional)
1 teaspoon honey or maple syrup, optional (or substitute any preferred sweetener)
1/4 cup diced mango (approx. half of a small mango) or strawberries
Instructions:
In a half pint jar or container, add oats, milk, yogurt, chia seeds, almond extract and honey. Put lid on jar and shake until well combined. Add mangoes and stir with fork until mixed throughout. Return lid to jar and refrigerate overnight or up to 2 days. Eat chilled.
