I’m currently under the weather, and as a result have only been wanting to eat soup and roasted veggies. Craving’s aside, I know how important protein is to the healing process, so to help boost my protein intake I made this dip.
I usually make a version of this dip with cashews but didn’t have any so I subbed-in hemp hearts; which as it turned out, was really delicious.
I drizzled my dip over roasted cauliflower and yams, but it would also make a great veggie dip or dressing for a salad.
Make up a batch and try it for yourself!
Cilantro Hemp Dip… or Drizzle
1 cup of raw hemp hearts
Juice from 1 lemon
2 teaspoon of dijon mustard
1/3 cup of olive oil
1/4 cup water (approx.) to thin out the dressing so you can blend it
1/4-1/2 cup of nutritional yeast
Sea salt to taste
- Blend all of the above ingredients in a high powered blender until smooth.
- Once blended, stir in 2-3 chopped green onions and half a bunch of finely chopped cilantro.
- Serve and enjoy!
