Green Goddess Dressing!

Happy Monday!

I first made this recipe  last week and can not get enough of it! I think I will always have a jar of this in my fridge. I have used it as a salad dressing, its a great dip for veggies, also adds amazing flavour to fish or chicken tacos.

This recipe is again from “It’s all good” by Gwyneth Paltrow.

 

Green Goddess Dressing:

Makes 1 1/4 cups       Vegan

10 large basil leaves

3 tablespoons of chopped chives

2 tablespoons of cilantro (leaves from about 5 sprigs)

1/4 cup chopped italian parsley (leaves from about 5 sprigs)

Leaves from 1 sprig of tarragon

2 scallions, white and light green parts only, roughly chopped

1/2 ripe avocado

1/4 cup Vegenaise*

2 tablesppons raw honey or xylitol ( I used honey)

2 tablespoons white wine vinegar

Juice of 1 lemon ( about 1/4 cup)

3 tablespoons extra virgin olive oil

1/4 cup water

1/2 teaspoon course sea salt

1/4 teaspoon freshly ground  black pepper

Combine all the ingredients in a powerful blender and blitz until completely pureed.

Keeps well in a jar in the fridge for up to a week.

*Vegenaise is a vegan organic mayonnaise. It has way better flavour than regular mayonnaise, no GMO’s and just a much better product than regular mayo.
