Healthy Chocolate Chip Granola Bars

I love granola bars as a morning or afternoon snack. They’re filling and sweet enough to satisfy my strongest cravings, and healthy enough that I don’t have to feel bad when I eat two in one sitting. It happens even to the best of us. ????

Granola bars are one of those things that most of us rarely think to make. If you’re one of those people, I encourage you to give this healthy chocolate chip granola bar recipe a try. Most store-bought granola bars are loaded with sugar and actually pretty pricey if you compare them to the cost of a batch of homemade ones.

This recipe may seem a bit daunting—thanks to the long ingredients list—but it’s actually really easy to prepare. Basically all you need to do is throw all of the ingredients into a bowl and mix them together. The nice thing about this recipe is that you can switch up the ingredients to change the flavour of your bars. I like to play around with different nuts, seeds and fruit every time I make them, which is pretty often.

I usually like to pair my granola bar with a fruit salad, banana or even a smoothie. But these bars also make for a great solo grab n’ go snack.

Healthy Chocolate Chip Granola Bars


 

Ingredients:

3c quick cooking oats

1/2c raw chopped nuts (eg. walnuts, almonds, cashews)

1/2c pumpkin seeds

1/2c dried fruit (eg. cranberries, raisins)

1/4c ground flax seeds

1/4c wheat bran

1/4-1/2c chocolate chips

Cinnamon to taste

1/8c unsweetened coconut

1/2c natural peanut butter

1/2 c honey

1/2c unsweetened apple sauce

6 egg whites

Vanilla to taste

Instructions:

  • Preheat your oven at 350 degrees.
  • Mix wet and dry ingredients separately, then combine together.
  • Press firmly into a lightly greased (9×11) pan.
  • Bake or about 25 minutes, until golden brown.
  • Cut into granola bars.
  • Keep in fridge or separate and freeze so that you always have them on-hand when you’re in a pinch. ????
