This has been a staple in my house for many years. It has changed many times and changes based on what ingredients I have on hand. Don’t be afraid to make changes to accomodate what you have on hand. I have used cashews to replace peanuts. Kale to replace the peas. I don’t like adding egg to my fried rice but if you do…go for it. I love one pot dishes and I love them even more when they are very colorful! I hope you enjoy this too. Its great the next day packed in a mason jar for lunch at work or on the road.
Ingredients:
Coconut oil 2 tablespoons plus 1 teaspoon – may need more
1 pack of organic extra firm tofu drained and cut into 1″ squares or chopped chicken
1 red pepper -diced
1 whole pineapple cut up into 1″ squares
3 cups of cooked brown rice – I like brown basmati
1 bunch of Green onions – chopped
1 bunch Cilantro – chopped
toasted cashews – chopped
Sriracha – i like costco brand
Soy sauce – I use wheat free organic Tamari
Preheat oven to 400 degree. Add about 1 tablespoon coconut oil and 2 tablespoons soy sauce to large baking sheet and place in oven that is preheating to melt coconut oil. Once melted add cut up tofu and bake for 15-20mins or until toasted. Toss halfway through.
Heat 1 teaspoon of coconut oil in large frying pan, add red pepper and sauté for 2-5 mins until soft, add cashews, rice, pineapple, tofu and stir till combined then add about a 1/4 cup of soy sauce and desired amount of sriracha. Top with cilantro and green onions and serve!
