Refreshing Cucumber Salad

Summer is my favourite time of year.  It means longer days, lazy afternoons at the beach, camping, and cooking on the grill.  It’s also when I typically make a lot of salads.

Salad’s are the perfect summer meal. They’re quick, easy, versatile and a great way to take advantage of fresh veggies. This cucumber salad can be whipped up in minutes and is a great accompaniment to anything grilled on the barbecue. You can also include a variety of other veggies and herbs from your garden for a simple, fresh salad.

Refreshing Cucumber Salad

Makes 2 servings

Ingredients:

1 large cucumber

1 large tomato

1tbsp olive oil

Fresh ground pepper

Dash of salt

Instructions:

  • Chop the cucumber and tomato into small cubes.
  • Toss with olive oil, pepper and salt.
  • Serve Chilled.
